Menu based on organic grains (corn, wheat and field beans), partly produced on the farm. Hers is a pure, healthy and clean egg. Brownish shell, compact yolk and intense but natural gold color, quite dense egg white. The smell when raw is almost imperceptible, but it is from cooked and especially on the palate that the San Bartolomeo egg expresses itself at its best: fat, full-bodied and protein, sweet and delicately savory, warm, round and persistent, particularly dense and material . Genuine, precise and direct hints of real egg, from well-bred and fed hens, with light vegetable and country references.
